Quinoa is the “it” ingredient for so many dishes nowadays. Once cooked the light texture it produces makes for a great alternative to mainstays like white rice or couscous. It is whole grain but has an airy taste that works great for salads, especially when mixed with something as deep in nutrients as beets. That purple veggie boosts people on many levels – heart pressure, antioxidants, minerals, and many more – so including it in your diet is a no brainer if you’re already switching to quinoa. The chicken in this recipe gives it an added protein boost. This is best served on a nice warm lunch to keep you going.


1 cup beets
1 cup red quinoa
2 cups water
½ olive oil
1 clove garlic, crushed
1 cup (about 16) cherry tomatoes
½ pound boneless skinless chicken breasts
1 tablespoons balsamic vinegar
1 tablespoon lemon juice
3 tablespoons extra virgin olive oil
¼ cup goat cheese
Salt to taste
Pepper to taste

  1. Place the chicken in a skillet over high heat under enough water to cover it. Simmer and reduce heat until the chicken is cooked.
  2. Drain the chicken from the skillet and dice the chicken. Set aside and let cool.
  3. Place the quinoa in a saucepan over medium heat with 2 cups water. Simmer and let cook until the quinoa it is tender.
  4. image2Transfer quinoa to a large bowl and cover. Set aside and let cool.                                                          
  5. Place the beets in a saucepan in medium heat with enough water to cover them. Simmer and let cook until the beets are tender.
  6. Transfer beets into bowl and set aside. Let cool.
  7. In a medium bowl add the lemon juice, vinegar, salt, pepper, and garlic and whisk.
  8. Pour half the dressing on the quinoa and mix thoroughly.
  9. Add the chicken, beets, tomatoes and goat cheese white pour the remainder of the dressing.

There are many beet and quinoa salads that add more vegetables like cucumbers and green beans. Some make interesting changes in the dressing as well, like creating heavier ones with syrup or creamier ones with yogurt. Again, the options are all yours. Just keep this in mind: quinoa will get you full rather quickly, so there may be no need to load up. Just enjoy the simplicity of this salad.
